1-Year Diploma in Culinary Skills 2019

(Only one intake is available for this qualification in January)

Learners are continually assessed both on practical and theoretical levels during all courses.
At the conclusion of this course the applicable CTH International exam will be written.

12 Months Course
(6 months Theory & 6 Months Industry)

Introduction to the Catering and Hospitality Industry.
Food Safety in the Professional Kitchen.
Introduction to menu planning, costings and team work.
Meat, poultry and offal.
Fish and shellfish.
Vegetables, pulses and vegetable proteins.
Stocks, soups and sauces.
Pasta, rice and eggs.
Pastry and dough products.
Cold and hot desserts.
Biscuits, cakes and sponges.

Fees Include:                  

All ingredients, two sets of uniforms, a basic pastry knife set.  International Registration. Local Exam Fees.

Fees do not include:
Accommodation, transport, special equipment (list will be provided), safety shoes, and personal toolbox and content. C&G dated exam fees and name registration is not included.  Once exam registration has been done students will be informed in writing of the costs involved. Dated exam fees must be paid before exams can be written.

Fee Structure:

5% Discount for once off full payment 

R55,000.
A deposit of R15,000 is payable by November 2018.

Monthly payments as follows:
1st Payment January 2019 x R4,000
Balance of payments Feb to October 9 x R4,000
Total to be paid by October 2019.
